My motivation for this months recipe came from an ATC members recent weekend visit to Morocco. A wonderfully vibrant & diverse food culture exists and spices feature prominently. This delicious meal draws on the slow cooking method popular in Moroccan cooking (often using a tagine) and incorporates zingy spices to add tons of flavour.
